<p>Raise your hand if you had the word "pandemic" in your 2020 strategic plan - and like that, the world quickly changed. The COVID-19 pandemic is reaching further and farther than any key worldwide event in several decades. How we interact with one another; how business is conducted; where we live; and how we manage through all of this is, quite candidly, up for grabs. The changes to our lifestyles are deep and wide. No one is spared.</p>
<p>The convenience store industry is no different. Retail has taken huge hits due to the lockdowns but fortunately for the c-store industry, we were declared essential and able to minimize the economic damage in the short term. The long term, though, poses some greater challenges. This presentation addresses the new Safety, Transactional, Marketing, Foodservice and Store Design needs.</p>
John Matthews

John Matthews is the president and CEO of Gray Cat Enterprises and is responsible for the management of all consulting activities for the firm. His twenty-five years’ experience in retail management includes marketing and operations management; category management; mergers and acquisitions; facilities management; and real estate and corporate communications in a spectrum of industries, including quick service restaurant, convenience store operations, and general retail.
In recent years, Matthews has performed consulting and senior project management for Quiznos, Sylvan Learning Centers, Starbucks and many others in both marketing and operations functions.
His views have appeared in various newspapers and industry trade publications. He has spoken before hundreds of business groups and appeared on numerous radio and television media outlets. In addition, Matthews has written two step-by-step manual’s, Local Store Marketing Manual for Retailers and Grand Opening Manual for Retailers. His latest book, Game Changing Strategies for Retailers is now on Amazon.
Matthews holds a bachelor of arts in communications from Michigan State University.

<p>Simplicity has long been a tenant of successful foodservice. Whether traditional QSR, fast casual or convenience stores - arenas with limited storage, prep, cooking space and in many cases shared labor - the simpler a foodservice program, the more likelihood for success. Simplicity of menu is also proving a post pandemic necessity. Whether due to decreased labor availability or increased allocations from some manufacturers, the more simplistic menu and execution, the easier it has been for convenience operators to pivot, ensuring they have necessary stock and labor.</p>
<p>During this session, our panel members share what they have used to simplify their offering and how they continue to tackle labor and logistics challenges while working to service their guests.</p>
